The food fanatic and her fussy eater: banana muffins

Do you know the muffin man? It’s the muffin lady actually! I made banana muffins… with chocolate chips of course.

I made them because I wanted to make a pudding that wasn’t completely unhealthy but was tasty. And how else was I going to get my husband to eat some fruit this month??

I actually quite like baking cakes. There isn’t much you can do wrong with muffins and most people like cakes even if they have gone slightly off plan! So I find them relatively stress free to make. Plus you can cover most mistakes with icing.

These banana muffins went down a treat at home, at my work and at the Hubby’s work too. They are really simple to make; with minimal ingredients. But also taste lovely.

The recipe is simple;

Preheat the oven to: 190C

250g self-raising flour

A handful of chocolate chips

3 mashed bananas

2 eggs

4 to 5 fl oz milk

Teaspoon bicarbonate of soda

Teaspoon cinnamon

Teaspoon of vanilla extract

Pinch of salt

All the ingredients are chucked into a bowl and mixed together well. Then popped into cake cases and baked for 20 mins. Somehow I never manage to make the muffins look alike! But I suppose that there are worse things than odd looking muffins. This recipe made 12 muffins.

They’re pretty quick to make; I made these while waiting for my pizza dough to rise. Their simplicity doesn’t stop them from being really yummy.

what did The fussy eater think ?? well he scoffed quite a few! And was very upset when anyone else ate some.

I do like a good pudding.
