The food fanatic and her fussy eater: gingerbread!

I made gingerbread biscuits… I had to make gingerbread biscuits, not men, as I had no little men cutters. My kitchen is awfully ill equipped. But I did fashion a self portrait for Karl so he could have a gingerbread wife! My confession is that I did use shop bought icing as I HATE trying to get it in the piping bag and it ends a total disaster… maybe I’ll master that skill another day?

So ingredients where as follows:

350g flour – plain white flour

1 teaspoon bicarbonate of soda

1 large egg

2 large teaspoons cinnamon

Pinch of salt

2 1/2 teaspoons ground ginger

130g softened unsalted butter

180g soft brown sugar

5 Tablespoons golden syrup

And icing.

As always all chucked in haphazardly. Well actually I was quite good I mixed the golden syrup in parts so that the dough didn’t get too wet and sticky at once.

The dough is then rolled out on a pre floured surface and rolled to about the thickness of a pound coin. It’s surprisingly flakey (but mine baked perfectly)and rises quite well in the oven. They are then cut to shape and popped in a preheated oven (around 180 fan) for 10 – 15 mins. My oven is tinny so I had to do it in batches.

Then the biscuits are left to cool before being iced. It’s that easy. They went down pretty well at our respective offices. And where all gone within a few hours.

And the fussy eater? Well he must have eaten at least 12. So I suppose that’s a win! But he did prefer the ones with no icing.

This baking thing isn’t too difficult!! My icing skills are childlike though.
