Food fanatic and her fussy eater: Chocolate muffins

I like making cakes as they tend to all get eaten. As long as they don’t have any fruit hubby will definitely eat them!! Well as long as there isn’t lots of icing. Failing that there is alway work; where people are too polite to not eat them.

This mixture makes 6 muffins. And is a mix of a few recipes. Like most of the things I cook it pretty easy;

130g plain flour

25g coco powder

1 teaspoon baking powder

80g chocolate chips

1 egg

100ml milk

60g caster sugar

2 tablespoons of olive oil

Preheat oven to 160c.

Sift flour into a large bowl add coco and baking powder and choc chips. Give it a good stir. In a separate bowl mix egg, sugar, oil and warmed milk then combine both mixtures.

Pop in oven for between 18 and 22 minuets. And yummy muffins you will have!

My fussy eater ate 3 so they can’t have been too bad.

I like making muffins because they rarely need technical kitchen equipment that I just don’t have!
