The food fanatic and her fussy eater: Dorset apple cake … in muffin form!

I had a bit of an experiment and made some apple muffins! I used a basic apple cake recipe and adapted it to make muffins of the right size for a picnic. I love cake, especially some that I can take out and about with me. My little experiment went quite well;

110g self-raising flour

2 tsp ground cinnamon

60g butter (I used unsalted)

60g light brown sugar and a table spoon of Demerara sugar

1 large egg

2 diced apples (I used green apples)
1 -2 handfuls of sultanas

Method was pretty simple; Mix flour and butter together, add sugar, add beaten egg and cinnamon. Then mix in your fruit! Into a preheated over (200 degrees) for 20 – 30 mins.

I didn’t add sultanas to two of the muffins so my fussy eater could have some! He hates sultanas (strange man I know). They went down really well at work and tasted pretty nice! Hubby even enjoyed them. Win!

They where so easy to make and everyone seemed to enjoy them; I also finally have another way to get my hubby to eat fruit.
